We visited about five of the more than 70 vineyards in Margaret River, which felt like stepping on ancient royal estates as they were so pompous and extensive.
During the wine tastings we mostly stuck to the white ones such as Riesling, Chardonnay and Sauvignon Blanc as the red ones left a rather dry, almost cotton-like mouth feel. This is due to its tannin, a substance that is contained in the skin and seeds of the grape. Apart from the taste, the tannin also gives the vine the ability to become smoother when aged. On the other hand, the white ones don't contain any tannin, as seeds and skin are removed straightaway after the harvest.
Aside from that we learned to distinguish between oaked and unoaked wines. The oaked ones were stored in toasted oak barrels, which are responsible for the often nutty and wooden flavour.
